Achiote is a shrub native to the tropical region of the Americas. The shrub contains small heart shaped pods which contain the annato seed. Achiote powder is made from grinding the seeds and has historically been used as a dye or paint. It has a rich red coloration and a subtle earthy juniper flavor. Use this powder to season meats.
To create a marinade, combine the powder with lemon juice, olive oil and salt.
Achiote is thought to have anti-fungal properties.
